I made this to honour the last kiwi fruit harvest from my huge kiwi vines, which I planted well over 20 years ago. I made the hard decision to remove these difficult to manage vines and replace them with a self pollinating Kiwi berry ‘Issai’ and a new Choko as my old one needs replacing.  Watch the video to find out more.

Slice up 3-4 kiwi fruit

Kiwi Cake Recipe

Ingredients

  • 4-6  Kiwi fruit, peeled and sliced (2 for puree, 4 on top) depends on fruit size
  • 320 g (2 1/2 cups) plain flour
  • 120 g (1 cup) brown sugar
  • 100 g (1 cup) avocado or seed oil
  • 100 g (1 cup) almond or soy milk
  • 16 g (3 tsp) baking powder
  • 2 eggs
  • icing sugar for dusting

Preheat a static oven at 180°C

Method

  • Line and grease a 20cm cake tin, put aside
  • Peel 2 kiwis and dice of them. Put in the mixer and reduce to a puree, put aside.
  • Slice the remaining kiwis in rounds and put aside for later.
  • Beat eggs and brown sugar until fluffy
  • Sift in dry ingedients and mix  fold together
  • Add in room temperature milk
  • Fold in oil
  • Fold in blended kiwi fruit
  • Pour batter into cake tin
  • Decorate with slices of kiwi fruit
  • Bake 45-55 minutes in moderate over until skewer is clean – the middle is the last to bake, so check carefully to avoid a gluggy middle.
  • Remove the cake from the oven and let it cool for a several minutes.
  • Enjoy with coconut yoghurt or cream!
